Although Easter is going to look much differently than planned for all of us this year, we’re still determined to make the day special for our little ones–and ourselves. The entire day is based on family, so getting down to the bare foundation of it seems not only appropriate, but like a new beginning. And most importantly teaching our children what truly matters.
I love springtime and the promises of warm weather and fun times ahead. And I really love all the fun foods that we typically make this time of year. We’re planning on making exactly what we would if it were a traditional Easter–and that includes fun salads and all. We’ll make a fun brunch for the family–chocolate chip pancakes and waffles, different fruits and salads (Quinoa and Macaroni Salad – both quick and delicious – listed below). Sunny weather is in the forecast after a week of rain, so we will be barbecuing Beyond Burgers and loading them with all of our favorite toppings like: Follow Your Heart Provolone, Whole Foods BBQ Sauce, Vegenaise, avocado, cucumbers, spinach, thinly sliced sweet onions and grilled jalapeños for the adults!
We’ve designated one day a week for a special activity (ex: Monday is play-doh day, Tuesday is crafts, Wednesday is special game day, Thursday is Science Experiments, etc). Friday just so happens to be our baking day, so my older son decided that we would be making carrot cake and cheesecake for the weekend! We were lucky enough to have vegan cream cheese available on our grocery delivery this week. We’re also pretty stocked on graham crackers for the crust, because we’ve been making plenty of s’mores. And on top of that, oatmeal coconut cookies are on the menu! No shortage of sugared leftovers around here.😜
The Easter Bunny is still planning on bringing our kiddos some of their favorite things that can continue to keep them occupied during our lockdown (games, legos, chalk, etc). And that includes some cute vegan chocolate covered bunnies (thank you Amazon) and the most amazing and delectable vegan creme eggs (Thank you Obsessive Confection Disorder). And of course more fun goodies, via egg hunt! Once all of that is over, I’ve printed out Easter Bingo and Charades. Any games that keep the family together and laughing are a win in my book.
