Fourth of July is this week and we are SO excited. It’s one of our children’s favorite holidays and I’m a sucker for themed foods – so it’s right up my alley. Also, my husband will greatly welcome any excuse to grill up veggie burgers, loaded with all of the best toppings. As a mom of little ones, I am always actively trying to stay in the present moment, so I love dishes that are simple, yet still delicious, with no compromise on flavor. So today we bring you our very favorite recipes to make your vegan barbecue unforgettably delicious and nutritious!
Growing up in Southern California, we have always been very spoiled with Elotes, a savory and authentic grilled Mexican Street Corn, on every street corner. When we transitioned to being vegan, this was a dish that we had no tolerance for anything less than the taste that we’ve always loved.
- Boil Corn for 5 minutes, then roast on the grill to desired crispness
- Top with Earth Balance vegan butter and slather on Vegenaise
- Sprinkle with Kelly’s Cheezy Parm (or nutritional yeast flakes), salt, chili lime seasoning (You can find this at Trader Joe’s or a brand called Tajin at the grocery store)
- Squeeze lime juice, garnish with chopped cilantro
Delicious Savory Vegan Macaroni Salad – our very favorite! A delicious savory macaroni salad, with a nice bite.
Simple Summer Quinoa Salad – a simple and refreshing summer picnic dish. Our favorite quinoa salad is just the perfect thing for any summer meal! It’s simple to make, colorful, nutritious and a crowd pleaser!
Beyond Meat always comes through with our favorite veggie meat to grill. Herbivores and omnivores alike agree that their veggie burgers and their sausages are quite literally, beyond.🤓 We tried the new “meatier” version and it was great–I truly believe that a lot of meat eaters will begin to eat these on a regular basis. We always grill them up with Follow Your Heart cheese and top with our favorites: Vegenaise, Whole Foods 365 Vegan BBQ Sauce, thinly sliced Maui sweet onions (cut with my favorite mandoline), avocado and fresh spinach.
Berry Crumble with Vegan Cream Cheese Drizzle – a sweet Berry Crumble, with an out-of-this-world vegan cream cheese drizzle on top! Color the drizzle in red, white and blue and you have a perfectly festive dish!
No-Bake Vegan Cherry Cheesecake – my very favorite summertime dessert! A sweet and delicious no-bake vegan cheesecake. Easy, cool, quick and a total crowdpleaser.
