Summer Berry Trifle

If you need the quickest and most delicious vegan trifle that you can literally throw together in minutes, this is your recipe! Vibrant strawberries and blueberries make this dessert perfect for the Fourth of July. We’ve been making this for a few years and vegans and non-vegans alike are always scraping the bottom of this dish!

There’s a big misconception out there that vegan recipes need to be homemade and from scratch. While we love and appreciate all of the hard work and love that goes into that, with so many options available now, it’s nice to be able to quickly throw something delicious together. Especially if you need a last minute treat.

This trifle requires a few ingredients that most health food stores carry. We use this vanilla pudding, by Simply Delish. It has an amazing flavor that adds so much to the dessert. But if you’re unable to find it, any vegan vanilla pudding recipe will work. Jello Vanilla Pudding also happens to be vegan as well, if you prepare it with a milk substitute. We’ve done this too with good results. 

And for the cake, we use Abe’s Vegan Pound Cake, in the original flavor. It’s widely available now and many health food stores carry this in their refrigerated section—unless you’re shopping at Whole Foods. You can find the closest location that carries it here. If you’re unable to find a ready made vegan cake, this is a good substitute too.

Summer Berry Trifle

Course Dessert

Ingredients

  • 2 boxes boxes of Vegan Vanilla Pudding (we use Simply Delish, but Jello Vanilla Pudding is also vegan)
  • 1 loaf Abe’s Pound Cake, Original Flavor (can substitute with cake recipe above)
  • 2 containers So Delicious Coco Whip, mildly thawed
  • Fresh Berries of Choice - we use strawberries and blueberries

Instructions

  1. Make vanilla pudding according to box

  2. Cut Abe's Pound Cake into 1 inch cubes, layer on bottom of dish

  3. Spread pudding evenly with a spoon, over bread cubes

  4. Spoon a layer of coco whip over pudding and layer fruit. Continue to spoon 2-3 more layers, depending on the size of your dish

  5. Finish with berries on top and serve immediately, or cover and refrigerate.

  6. Enjoy!

 

Ridiculously simple (can we even call this a recipe?😜) and incredibly tasty…proving that making vegan dishes does not need to be complicated at all. Happy Fourth of July to our US friends! And Happy Weekend to all of our other friends. 🙂 Enjoy!
